Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 cups rolled oats
  • 1 1/2 cups raisins

Equipment

  • 9x13-inch baking pan
  • Parchment paper
  • Mixing bowls
  • electric mixer or whisk
  • Spatula
  • toothpick (for testing doneness)

Method

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper or grease it lightly.
  2. In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually mix into the wet ingredients until fully incorporated.
  4. Stir in the rolled oats and raisins until evenly distributed.
  5. Spread the dough evenly in the prepared pan and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Notes

Swap raisins with dried cranberries, cherries, or chocolate chips for a fun variation. For extra chewiness, chill the dough for 15 minutes before baking. These bars store well in an airtight container for up to 5 days.
