Ingredients
  

  • 2 medium onions finely chopped
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 1 tablespoon vegetable oil plus more for frying

Method
 

  1. Peel and finely chop the onions. Set aside.
  2. In a large bowl, combine flour, sugar, baking powder, salt, and black pepper.
  3. Stir in milk and 1 tablespoon vegetable oil until a smooth batter forms.
  4. Fold in chopped onions until evenly coated in the batter.
  5. Heat about 1/4 inch of vegetable oil in a skillet over medium heat until hot.
  6. Drop spoonfuls of the onion mixture into the oil, flatten slightly, and cook for 2–3 minutes per side until golden brown.
  7. Drain on paper towels and serve warm.

Notes

Serve with sour cream, ranch dressing, or applesauce. For extra flavor, add chopped parsley or a pinch of paprika to the batter.
