Ingredients

  • 6 cups whole milk, divided
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup long-grain white rice (heaping)
  • 2 tsp vanilla extract
  • ground cinnamon (optional)

Equipment

  • large saucepan
  • wooden spoon

Method

  1. In a large saucepan, combine 5½ cups of milk, sugar, and salt. Stir and bring to a gentle boil.
  2. Add the washed rice, stir well, reduce heat to low, and simmer for 50–60 minutes, stirring occasionally.
  3. Once thick and creamy, remove from heat and stir in vanilla extract.
  4. Let cool slightly, then stir in the remaining milk to reach desired consistency.
  5. Serve warm or chilled with a pinch of ground cinnamon on top.

Notes

Stir occasionally to prevent sticking. Adjust thickness by adding more milk if desired. Cinnamon is optional but highly recommended.
