Ingredients
  

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tbsp olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp soy sauce (optional)
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • salt and pepper, to taste
  • chopped parsley (optional, garnish)
  • crushed red pepper flakes (optional, garnish)
  • shredded cheddar or mozzarella cheese (optional, garnish)

Method
 

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Add chicken, season with salt, pepper, paprika, and garlic powder. Sear until golden and cooked through. Remove and set aside.
  3. Pour in chicken broth and deglaze the pan, scraping up brown bits.
  4. Stir in honey BBQ sauce and soy sauce. Simmer 2–3 minutes.
  5. Add uncooked penne and enough water (about 1–1½ cups) to barely cover. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender.
  6. Return chicken to skillet. Stir and simmer 2–3 minutes to combine flavors.
  7. Taste and adjust seasoning. Garnish with parsley, cheese, or red pepper flakes if desired.

Notes

For extra creaminess, stir in shredded cheese before serving. Adjust the spice by adding crushed red pepper flakes. Leftovers reheat well for lunch the next day.
