- In a large skillet or pot, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5–6 minutes. Remove and set aside.
 - In the same pot, add diced onion and sauté for 3 minutes until translucent. Add garlic and cook for another minute.
 - Return sausage to the pot. Add chicken broth, diced tomatoes, heavy cream, and uncooked pasta. Stir to combine.
 - Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, or until pasta is tender and liquid is mostly absorbed.
 - Stir in shredded cheddar cheese until melted. Season with salt and pepper to taste.
 - Garnish with green onions and serve warm.
 
Notes
You can swap the cheddar for Monterey Jack or mozzarella for a different flavor. Try adding a handful of spinach at the end for extra greens. Adjust creaminess by adding more or less heavy cream.
