Ingredients
  

  • 2 cups buttermilk pancake mix
  • 1 lb turkey breakfast sausage use as a pork-free alternative
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup pure maple syrup
  • 2 tablespoons butter for greasing

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a baking dish with butter.
  2. Cook the turkey breakfast sausage in a skillet over medium heat until browned and crumbly. Drain excess fat.
  3. In a mixing bowl, combine pancake mix, milk, and eggs until just mixed. A few lumps are fine.
  4. Fold in half of the maple syrup and a portion of the cooked sausage.
  5. Pour half of the batter into the prepared baking dish. Sprinkle remaining sausage evenly over the batter.
  6. Top with the remaining batter and gently spread to cover.
  7. Bake uncovered for 30–35 minutes, until golden brown and springy in the center.

Notes

Serve warm with extra maple syrup on the side. Chicken sausage or plant-based sausage can also be used.
