Method
- Preheat the oven to 350°F (175°C) and grease a baking dish with butter.
- Cook the turkey breakfast sausage in a skillet over medium heat until browned and crumbly. Drain excess fat.
- In a mixing bowl, combine pancake mix, milk, and eggs until just mixed. A few lumps are fine.
- Fold in half of the maple syrup and a portion of the cooked sausage.
- Pour half of the batter into the prepared baking dish. Sprinkle remaining sausage evenly over the batter.
- Top with the remaining batter and gently spread to cover.
- Bake uncovered for 30–35 minutes, until golden brown and springy in the center.
Notes
Serve warm with extra maple syrup on the side. Chicken sausage or plant-based sausage can also be used.
