Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 6 rings canned pineapple rings, drained
  • 1/2 cup brown sugar
  • 12 maraschino cherries

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and granulated sugar until light and fluffy. Add egg and mix well. Stir in flour, baking powder, and salt to form dough.
  3. Place a spoonful of brown sugar in the center of each pineapple ring and top with a maraschino cherry.
  4. Place pineapple rings cherry-side down on the baking sheet. Scoop cookie dough over each ring, covering evenly.
  5. Bake for about 15 minutes or until cookies are golden brown.
  6. Remove from oven and let cool slightly before serving.

Notes

Drain pineapple rings very well to avoid excess moisture. Serve warm or at room temperature.
