Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and granulated sugar until light and fluffy. Add egg and mix well. Stir in flour, baking powder, and salt to form dough.
- Place a spoonful of brown sugar in the center of each pineapple ring and top with a maraschino cherry.
- Place pineapple rings cherry-side down on the baking sheet. Scoop cookie dough over each ring, covering evenly.
- Bake for about 15 minutes or until cookies are golden brown.
- Remove from oven and let cool slightly before serving.
Notes
Drain pineapple rings very well to avoid excess moisture. Serve warm or at room temperature.
