Method
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mix together the rolled oats, pumpkin puree, honey or maple syrup, almond butter, pumpkin spice, and salt until well combined.
- Add in the chopped nuts and dried fruits, stirring until evenly distributed.
- Press the mixture firmly into the prepared baking dish.
- Bake for 25-30 minutes or until the edges are golden brown.
- Allow to cool completely before cutting into bars.
Notes
Store bars in an airtight container for up to 5 days or refrigerate for a firmer texture. You can drizzle melted dark chocolate on top for extra flavor. Swap almond butter for peanut or sunflower butter if preferred.
