Ingredients
  

  • 7 tbsp butter salted or unsalted, softened
  • 1/2 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg yolk
  • 1/4 tsp red gel food coloring
  • 1 cup all-purpose flour
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup red sanding sugar
  • 18 Hershey chocolate kisses unwrapped

Method
 

  1. Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper and set aside.
  2. In a stand mixer or large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg yolk, vanilla extract, and red gel food coloring. Mix until fully combined.
  4. Add the flour, cocoa powder, baking powder, and salt. Mix just until the dry ingredients disappear—do not overmix.
  5. Scoop the dough into 18 equal portions. Roll each into a ball, then roll in red sanding sugar to coat.
  6. Place cookie dough balls onto the prepared baking sheet and bake for 10 minutes.
  7. Immediately press a chocolate kiss into the center of each cookie as they come out of the oven.
  8. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Notes

For best results, chill the dough for 15 minutes if it feels too soft. Store cookies in an airtight container at room temperature for up to 5 days.
