Ingredients
  

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 sleeve Ritz crackers, crushed
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup unsalted butter, melted
  • 1 cup sour cream
  • 10.5 oz cream of chicken soup (1 can)
  • 0.5 cup chicken broth
  • 1 tbsp fresh parsley, chopped (optional)

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish. Season both sides of the chicken breasts with salt and pepper.
  2. In a mixing bowl, combine the sour cream, cream of chicken soup, and chicken broth. Stir until smooth.
  3. Place the chicken breasts in the prepared baking dish. Pour the creamy sauce evenly over the chicken.
  4. In another bowl, mix the crushed Ritz crackers, Parmesan cheese, and melted butter until well combined. Sprinkle this mixture over the chicken and sauce.
  5. Bake uncovered for 30–35 minutes, or until the chicken is cooked through (internal temperature of 165°F / 75°C). For extra crispiness, broil for 1–2 minutes at the end.
  6. Sprinkle with fresh parsley if desired and serve hot with sides of your choice.

Notes

For a lighter version, substitute Greek yogurt for the sour cream. You can also swap cream of chicken for cream of mushroom or celery. Pair with rice, mashed potatoes, or a fresh green salad for a complete meal.
