  • 4 boneless, skinless chicken breasts
  • salt and pepper, to taste
  • 1 sleeve Ritz crackers, crushed
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup unsalted butter, melted
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 0.5 cup chicken broth
  • 1 tbsp fresh parsley, chopped (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Season both sides of chicken breasts with salt and pepper and arrange them in the baking dish.
  3. In a bowl, whisk together sour cream, cream of chicken soup, and chicken broth until smooth.
  4. Pour the sauce evenly over the chicken breasts.
  5. In a separate bowl, mix crushed Ritz crackers, Parmesan cheese, and melted butter until evenly coated.
  6. Sprinkle the cracker mixture evenly over the chicken and sauce.
  7. Bake uncovered for 30–35 minutes, or until chicken reaches 165°F (75°C).
  8. Optional: Broil for 1–2 minutes for a golden crust.
  9. Let rest for 5 minutes, garnish with parsley, and serve warm.

Notes

Always check that the chicken reaches an internal temperature of 165°F (75°C) before serving. You can substitute Greek yogurt for sour cream for a lighter version. Double the batch for large gatherings—it's a guaranteed crowd-pleaser.
