Ingredients
  

  • 1 lb hot sausage, uncooked
  • 8 oz cream cheese, softened
  • 10 oz Rotel diced tomatoes and green chilies, drained
  • 1 1/2 cups Bisquick
  • 2 cups shredded Mexican cheese blend

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In the bowl of a stand mixer, combine sausage, cream cheese, Bisquick, drained Rotel, and shredded cheese until fully mixed.
  3. Use a cookie scoop to form the mixture into 1-inch balls and place them on the prepared baking sheet.
  4. Bake for 18–20 minutes or until golden brown and cooked through.
  5. Serve warm, garnished with parsley if desired, and enjoy with your favorite dipping sauce.

Notes

Drain the Rotel very well to avoid a wet mixture. Serve warm with ranch, honey mustard, or spicy mayo for dipping.
