  • 4 large boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 2 cups fresh spinach, chopped
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Preheat the oven to 375°F (190°C) and cut a pocket into each chicken breast.
  2. Mix cream cheese, spinach, mozzarella, garlic powder, and Italian seasoning until smooth.
  3. Stuff each chicken breast generously and secure with toothpicks.
  4. Heat olive oil in an oven-safe skillet and sear chicken 3–4 minutes per side until golden.
  5. Pour chicken broth around chicken, drizzle with lemon juice, and bake uncovered for 25–30 minutes.
  6. Remove from oven, sprinkle with Parmesan cheese, and rest for 5 minutes before serving.

Notes

Secure the chicken well with toothpicks to prevent filling leakage. Let the chicken rest before slicing for maximum juiciness.
