These sausage, egg, and cheese roll-ups are a quick and satisfying breakfast idea made with tortillas, scrambled eggs, melted cheddar, and savory sausage. Golden and crisp on the outside, cheesy and hearty on the inside!

Ingredients
  

  • 1 lb breakfast sausage
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large flour tortillas
  • butter or oil, for greasing

Method
 

  1. Cook sausage in a skillet over medium heat until browned and crumbled.
  2. In a bowl, whisk the eggs, milk, salt, and pepper together.
  3. Pour the egg mixture into the skillet with the cooked sausage. Cook, stirring gently, until the eggs are set.
  4. Remove from heat and stir in the shredded cheddar cheese until melted.
  5. Spoon the sausage and egg mixture onto the center of each tortilla.
  6. Roll each tortilla up tightly, tucking in the ends.
  7. Grease a skillet with butter or oil and place the roll-ups seam-side down. Cook for a few minutes on each side until golden brown and crisp.
  8. Serve immediately.

Notes

You can swap cheddar with Monterey Jack or pepper jack for a spicier kick. Add sautéed veggies like bell peppers, spinach, or mushrooms for more nutrition. These roll-ups freeze well—wrap tightly in foil and reheat in a skillet or oven.
