  • 1 pound breakfast sausage, crumbled
  • 20 oz frozen hash browns, thawed
  • 8 large eggs
  • 1 cup milk (240ml)
  • cups shredded cheddar cheese (170g)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup diced bell peppers (optional)
  • ½ cup chopped spinach (optional)
  • ½ tsp smoked paprika (optional)
  • ¼ tsp crushed red pepper flakes (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Heat a large skillet over medium heat. Cook sausage, breaking apart, until fully browned (5–7 minutes). Drain grease.
  3. Spread thawed hash browns evenly in baking dish. (Optional: sauté first for crispiness.)
  4. Sprinkle cooked sausage over hash browns. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder. Pour mixture over sausage and potatoes. Top with cheddar cheese.
  5. Bake 35–40 minutes, until eggs are set and cheese is golden brown.
  6. Cool 5 minutes before slicing. Serve warm.

Notes

Add your favorite veggies like bell peppers or spinach for a boost of color and flavor. This casserole can be assembled the night before, covered, and refrigerated—just bake in the morning. Leftovers keep well for up to 4 days and reheat beautifully.
