Ingredients
  

Pastry
  • 1 sheet puff pastry, thawed if frozen
Filling
  • 1 lb ground chicken or turkey sausage seasoned
  • 1 teaspoon dried sage or fresh, finely chopped
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon breadcrumbs optional, for moisture control
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
Egg Wash
  • 1 whole egg, beaten for brushing

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground sausage, sage, smoked paprika, breadcrumbs (if using), salt, and black pepper. Mix until evenly incorporated.
  3. Lightly roll out puff pastry and cut it in half lengthwise.
  4. Shape sausage mixture into long logs and place along one edge of each pastry strip.
  5. Roll pastry tightly around the filling and seal the edge by pressing gently.
  6. Cut into equal-sized pieces and place seam-side down on the prepared baking sheet.
  7. Brush tops with beaten egg and lightly score with a knife.
  8. Bake for 20–25 minutes until golden brown and cooked through.

Notes

Serve warm with mustard or dipping sauce of choice. These can be assembled ahead and refrigerated before baking, or frozen unbaked for up to 2 months.
