Method
- Preheat oven to 350°F (175°C).
- Place the unbaked pie crust into a 9-inch pie dish and set aside.
- In a large bowl, combine shredded coconut, chopped nuts, sugar, and salt. Stir in beaten eggs and melted butter until evenly combined.
- Add optional ingredients such as chocolate chips, spices, or citrus zest if desired.
- Pour filling into the prepared pie crust, spreading evenly.
- Bake for 30–40 minutes, until golden brown and set in the center. The top should be lightly crisp, and the filling chewy.
- Cool completely before slicing. Serve plain, with whipped cream, or with a scoop of vanilla ice cream.
Notes
For extra flavor, lightly toast the coconut and nuts before mixing into the filling.
