- Preheat oil in a deep skillet or fryer to 350°F (175°C).
- Soak the chicken in buttermilk for at least 1 hour, or overnight in the fridge for extra tenderness.
- Mix flour and spices in a large bowl: paprika, garlic powder, onion powder, cayenne, salt, and pepper.
- Dredge the chicken pieces in the seasoned flour, pressing the flour onto the chicken to coat well.
- Fry in batches for 12–15 minutes, turning halfway, until golden brown and cooked through (165°F/74°C inside).
- Drain on a rack or paper towels. Let rest a few minutes before serving to keep the crust crispy.
Notes
For extra flavor, marinate the chicken overnight in the fridge. Use a thermometer to maintain the oil temperature at 350°F (175°C) for even frying. Serve with coleslaw, biscuits, or mashed potatoes for a full Southern meal.
