Southern Squash Casserole

A true Southern classic, this creamy yellow squash casserole is made with tender squash, onion, sour cream, cheddar cheese, and buttery cracker topping. Comfort food at its best, perfect for family dinners or holiday gatherings.

Ingredients
  

  • 4 cups yellow squash, sliced
  • 1 small onion, finely chopped
  • 2 tbsp butter, plus more for topping
  • 2 large eggs, beaten
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 sleeve (about 30) buttery round crackers, crushed
  • Salt & pepper, to taste
  • Optional: pinch of garlic powder or paprika

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a large skillet, melt the butter and sauté squash and onion over medium heat until tender, about 10 minutes.
  3. In a bowl, mix sour cream, eggs, cheddar, half the crackers, and seasoning until combined.
  4. Stir in cooked squash mixture and pour into prepared dish.
  5. Top with remaining crushed crackers and dot with butter.
  6. Bake 25–30 minutes until golden and bubbly.

Notes

For extra flavor, add a pinch of garlic powder, paprika, or cayenne pepper. You can prepare the casserole a day ahead and bake just before serving. It pairs perfectly with roasted meats, BBQ, or as part of a holiday spread.
