- Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
- In a large skillet, melt the butter and sauté squash and onion over medium heat until tender, about 10 minutes.
- In a bowl, mix sour cream, eggs, cheddar, half the crackers, and seasoning until combined.
- Stir in cooked squash mixture and pour into prepared dish.
- Top with remaining crushed crackers and dot with butter.
- Bake 25–30 minutes until golden and bubbly.
Notes
For extra flavor, add a pinch of garlic powder, paprika, or cayenne pepper. You can prepare the casserole a day ahead and bake just before serving. It pairs perfectly with roasted meats, BBQ, or as part of a holiday spread.
