Ingredients
  

Sushi Rice Base
  • 2 cups sushi rice uncooked
  • 2.5 cups water
  • 0.25 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
Spicy Salmon Layer
  • 1 lb fresh salmon fillet skinless and diced
  • 0.5 cup mayonnaise
  • 2 tablespoons Sriracha sauce adjust to taste
  • 1 teaspoon sesame oil
  • 0.5 cup green onions chopped, plus extra for garnish
  • 1 sheet nori cut into small strips
  • tobiko optional for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sushi rice according to package directions, rinsing it thoroughly and cooking until tender.
  3. Combine rice vinegar, sugar, and salt in a bowl and stir until dissolved. Fold this mixture into the cooked rice.
  4. Spread the seasoned rice evenly into the bottom of a baking dish and let it cool slightly.
  5. In a separate bowl, mix the diced salmon, mayonnaise, Sriracha, sesame oil, and green onions.
  6. Spread the salmon mixture evenly over the rice.
  7. Bake for 25–30 minutes or until the salmon is cooked through and lightly golden.
  8. Let the bake cool briefly, then garnish with green onions, nori strips, and tobiko if desired.
  9. Serve warm and enjoy!

Notes

Feel free to top with cucumber, avocado, or a drizzle of extra spicy mayo for added texture and flavor.
