Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 5.1 oz vanilla instant pudding mix 1 box
  • 2 cups cold milk
  • 1 box vanilla wafers
  • 2 bananas sliced
  • 1 cup fresh strawberries chopped, plus extra for garnish
  • crushed strawberry wafers optional garnish

Method
 

  1. Beat softened cream cheese in a mixing bowl until completely smooth.
  2. Add powdered sugar and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture until light and fluffy.
  4. In another bowl, whisk together vanilla pudding mix and cold milk for 2 minutes. Let sit until thickened.
  5. To assemble, layer vanilla wafers on the bottom of a serving dish.
  6. Add banana slices and chopped strawberries over the wafers.
  7. Spread a layer of the cheesecake mixture, followed by a layer of vanilla pudding.
  8. Repeat layers as desired, finishing with cheesecake or pudding on top.
  9. Garnish with fresh strawberries and crushed strawberry wafers if desired.
  10. Cover and refrigerate for at least 3 hours or overnight before serving.

Notes

For best texture, assemble at least 4 hours before serving to allow the wafers to soften slightly. Store refrigerated up to 3 days.
