Method
- Beat softened cream cheese in a mixing bowl until completely smooth.
- Add powdered sugar and vanilla extract, mixing until fully combined.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture until light and fluffy.
- In another bowl, whisk together vanilla pudding mix and cold milk for 2 minutes. Let sit until thickened.
- To assemble, layer vanilla wafers on the bottom of a serving dish.
- Add banana slices and chopped strawberries over the wafers.
- Spread a layer of the cheesecake mixture, followed by a layer of vanilla pudding.
- Repeat layers as desired, finishing with cheesecake or pudding on top.
- Garnish with fresh strawberries and crushed strawberry wafers if desired.
- Cover and refrigerate for at least 3 hours or overnight before serving.
Notes
For best texture, assemble at least 4 hours before serving to allow the wafers to soften slightly. Store refrigerated up to 3 days.
