Ingredients
  

  • 8 oz softened cream cheese
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for filling)
  • 1/2 cup diced strawberries
  • 8 slices brioche or challah bread
  • 4 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract (for batter)
  • butter or oil for frying
  • maple syrup, for serving
  • extra diced strawberries, for topping
  • powdered sugar, for dusting (optional)

Method
 

  1. In a bowl, beat softened cream cheese, powdered sugar, and vanilla until creamy. Fold in diced strawberries.
  2. In a shallow dish, whisk eggs, milk, and vanilla extract until smooth. Spread about 2 tbsp of filling onto one slice of bread, then top with another slice to form a sandwich.
  3. Dip each stuffed sandwich into the egg mixture, coating both sides well. Heat a skillet over medium heat with butter or oil.
  4. Cook each sandwich 3–4 minutes per side, until golden brown and cooked through.
  5. Serve warm topped with maple syrup, extra strawberries, and a dusting of powdered sugar if desired.

Notes

Best served warm. You can prepare the cream cheese filling the night before for quicker assembly. For extra indulgence, sprinkle with powdered sugar before serving.
