These Strawberry Oatmeal Bars are a wholesome and naturally sweet treat made with juicy strawberries, oats, and honey. Perfect as a snack, breakfast bar, or light dessert!

Ingredients
  

  • 1 1/2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries (chopped)
  • 1/4 cup honey or maple syrup
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, and salt. Add melted butter, egg, and vanilla extract; mix until crumbly.
  3. Press half of the oat mixture into the bottom of the pan to form the crust.
  4. In another bowl, mix chopped strawberries, honey or maple syrup, lemon juice, and cornstarch until combined.
  5. Spread the strawberry filling evenly over the crust layer.
  6. Sprinkle the remaining oat mixture over the filling and press gently to adhere.
  7. Bake for 35–40 minutes until golden and bubbly. Allow to cool before slicing into bars.

Notes

Use fresh or frozen strawberries for convenience. For vegan bars, replace the butter with coconut oil and the egg with a flax egg. Store leftovers in an airtight container for up to 3 days or refrigerate for a week.
