  • 1 cup sugar
  • 1 cup light brown sugar, packed
  • 1 cup vegetable oil or melted butter
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 2 cups chopped pecans

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish.
  2. Whisk sugar, brown sugar, oil, and eggs together in a large mixing bowl until smooth.
  3. In a separate bowl, combine flour, baking powder, and salt.
  4. Gradually add dry ingredients into the wet mixture, stirring until just combined. Add vanilla.
  5. Fold in chopped pecans evenly throughout the batter.
  6. Spread batter into the prepared dish and bake for 30–35 minutes, until golden and a toothpick comes out clean.
  7. Cool completely before slicing into squares. Serve at room temperature or slightly warm.

Notes

For extra depth of flavor, toast the pecans before folding them into the batter. This dessert stays moist for days and freezes beautifully.
