Ingredients
  

Base Mixture
  • 1 cup Greek yogurt or plant-based yogurt for a dairy-free option
  • 1/2 cup nut butter almond, peanut, or sunflower seed butter for nut-free
  • 1/2 cup protein powder vanilla, chocolate, or unflavored
  • 1/4 cup sweetener maple syrup or honey, to taste
  • 1 teaspoon vanilla extract or almond extract
  • 1/2 cup rolled oats or almond flour, can mix and match
  • 1/4 cup mini chocolate chips or chopped nuts/dried fruit for variation
  • 1 pinch salt to balance flavors

Method
 

  1. Combine Greek yogurt, nut butter, sweetener, and vanilla extract in a mixing bowl until smooth.
  2. Add protein powder, rolled oats or almond flour, mini chocolate chips, and a pinch of salt. Mix until thick.
  3. Line a muffin tin with liners or silicone molds. Spoon the mixture into each cup, pressing down gently.
  4. Place in the freezer for 1 to 2 hours until firm.
  5. Let the cups sit out for about 5 minutes before serving for optimal texture.

Notes

These cookie dough cups can be customized with different nut butters or add-ins like dried fruits or cacao nibs. Perfect as a make-ahead snack.
