- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook the ground beef for 5–7 minutes, breaking it apart as it cooks.
- Stir in the chopped onion and minced garlic. Cook for 3–4 minutes until softened and fragrant.
- Add smoked paprika, oregano, salt, and pepper. Stir well and cook for another minute. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooled beef mixture with cheddar and mozzarella cheese until well blended.
- Unroll crescent dough and separate triangles. Add a spoonful of filling to the wide end of each triangle, then roll toward the point and seal edges.
- Place rolls seam side down on the baking sheet and brush tops with beaten egg.
- Bake for 12–15 minutes or until golden brown and flaky.
- Let cool slightly, garnish with chopped parsley, and serve warm.
Notes
For extra cheesiness, sprinkle shredded cheddar over the croissants before baking. For a creamier filling, mix in a spoonful of cream cheese with the beef mixture. These reheat beautifully, making them ideal for meal prep or weeknight dinners.
